Rooted in a childhood spent watching her grandfather tend his bees on an Ohio farm, Donna brought that same quiet passion to the wildflowers of North Port, Florida. What started as a hobby became a calling, small-batch honey harvested from Florida hives and dried with a proprietary process that preserves everything nature put in, nothing more, nothing less.

What Sets Us Apart
Many small-batch honey producers rely on the traditional method, with frames set out and fans moving the ambient air. It is a time-honored approach, and Donna used it herself when she was starting out. It has served beekeepers well for generations and still does.
As her operation grew, Donna began exploring whether there was a more consistent way to get results she could stand behind, especially here in Florida, where humidity is a year-round companion. She designed and built a proprietary drying system that circulates clean, filtered air at controlled temperatures, keeping honey below 100°F throughout the process. The result is honey dried to exactly 15.9% moisture: the threshold that qualifies for Halal and Kosher certification (although our honey is not formally certified, we kept many cultures in mind when designing this process) and a standard she set for herself because it felt right. She also thought about the everyday reality of Florida living: an open jar on the counter can quietly absorb moisture from the air over time, especially through the summer months. Starting at a lower baseline gives your honey room to breathe, whether you go through a jar quickly or make it last. It was one of the reasons she pushed further than the standard required, and why so many hours went into designing and building the equipment and process behind what we do. That process is our trade secret, and we are proud of it.
