Recipe No. 1

Honey Cinnamon Roll-Ups

🌡️ 350°F oven
⏱️ 14–16 min bake time
🍯 Uses Altitude Apiary honey

Ingredients

Roll-Ups

  • 2 cups ground walnuts, toasted
  • 1/4 cup sugar
  • 2 teaspoons ground cinnamon
  • 12 sheets frozen phyllo dough, thawed
  • 1/2 cup butter, melted

Honey Syrup

  • 1/2 cup honey
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 tablespoon lemon juice

Directions

  1. Preheat oven to 350°F. Combine walnuts, sugar, and cinnamon in a bowl. Set aside.
  2. Place 1 sheet of phyllo dough on a 15x12-in. piece of waxed paper and brush with melted butter. Place a second phyllo sheet on top and brush with butter again. Keep remaining phyllo covered with a damp towel to prevent it from drying out.
  3. Sprinkle 1/4 cup of the walnut mixture over the buttered phyllo. Using the waxed paper, roll up tightly jelly-roll style starting from a long side, removing the paper as you roll. Slice each roll into 4 smaller rolls and transfer to a greased 13x9-in. baking dish.
  4. Repeat with remaining phyllo dough and walnut mixture, using 1/4 cup of filling per double sheet.
  5. Bake until light golden brown, 14–16 minutes. Remove from oven and cool in the dish on a wire rack.
  6. While rolls cool, combine all syrup ingredients in a small saucepan. Bring to a boil, then reduce heat and simmer for 5 minutes. Remove from heat and cool for 10 minutes.
  7. Drizzle warm syrup over the cooled rolls and sprinkle with any remaining walnut mixture. Serve and enjoy.

Honey-Mustard Glazed Salmon

🔥 Broil 3–4 in. from heat
⏱️ 8–12 min cook time
🍯 Uses Altitude Apiary honey

Ingredients

  • 10 salmon fillets (5 oz each)
  • 2/3 cup packed brown sugar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1/2 teaspoon salt

Directions

  1. Place fillets skin side down on a greased baking sheet. In a small bowl, combine brown sugar, Dijon mustard, honey, and salt. Spoon the glaze evenly over each fillet.
  2. Broil 3–4 inches from the heat until the fish just begins to flake easily with a fork, 8–12 minutes. Serve immediately.

Chipotle Honey Grilled Florida Spiny Lobster Tails

Think of these as a cousin to Singaporean chili crab, but with lobster. The chipotle honey butter is what makes these sweet, smoky, and spicy lobster tails interesting. Chipotle peppers bring a deep, smoky heat that pairs beautifully with fresh-caught, grilled Spiny lobster, while honey adds just the right amount of sweetness to balance the spice and create a gorgeous caramelized coating. The butter ties everything together, helping all those bold flavors cling to the lobster meat while adding a rich, indulgent finish. It's messy, buttery, sweet, spicy, and completely irresistible.

Ingredients

For the Lobster Tails

  • 4 Florida Spiny lobster tails (5–6 oz each)
  • Fresh cilantro and lime wedges, for garnish

For the Chipotle Honey Butter

  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 2 chipotle peppers in adobo sauce, minced
  • 1 teaspoon adobo sauce (from the can)
  • 2 garlic cloves, minced
  • 1 tablespoon fresh lime juice
  • ½ teaspoon smoked paprika
  • ½ teaspoon sea salt
  • ¼ teaspoon cracked black pepper

Directions

  1. Preheat grill to medium-high heat (about 400°F).
  2. In a small bowl, whisk together the melted butter, honey, minced chipotle peppers, adobo sauce, garlic, lime juice, smoked paprika, salt, and black pepper.
  3. Using kitchen shears, cut through the top of each lobster shell lengthwise and gently lift the meat up and over the shell, leaving it attached at the base.
  4. Brush the exposed lobster meat generously with the chipotle honey butter.
  5. Grill lobster tails meat-side down for 4–5 minutes. Flip, brush with more butter, and grill 4–5 minutes more, until the meat is opaque and reaches 140°F internally.
  6. Remove from the grill and brush with any remaining butter. Garnish with fresh cilantro and lime wedges, and serve immediately.
